Our newest seasonal is a perfect-for-summer refresher and a unique take on the traditional — and tart — German gose beer style. With a pale straw color and a hint of haze, it features a heady nose of fresh basil and sliced cucumber. These aromatic charms are followed by a bracing sourness and emphatic lemony and licorice-ish basil flavors, all matched with cuke notes and a noticeable smack of salt.

The thirst-quenching gifts of German-style  gose come from the combo of salt and sourness in a light bodied and low-ABV beer. To get the perfect amount of pucker in ours, we use the new “Philly” yeast strain instead of using the typical “kettle sour” approach. It features notes of tangerine, peach, grapefruit and melon, a hint of honeyish sweetness, and a clean semi-sticky hop bite on its finish. Assertive but exquisitely balanced and drinkable, its hoppy nose comes from two hefty (nearly 3 pounds per barrel) post-fermentation additions of hops. A dash of Vienna malt accentuates the beer’s tropical notes and makes its 70 IBU seem more like 50.

Bold IPA with hints of
mango, pear and citrus aroma

Our lushly hopped version of hazy IPA is brimming with aromas and flavors of pineapple, orange and passion fruit, in a cloudy treat that’s low on hop bitterness. For a uniquely juicy complexity, we ferment it with Kveik yeast to bolster the beer’s tropical charms. The Dry Dock beer for lovers of the very popular New England/juicy style of IPA.

Juicy/Hazy IPAs are typically fermented with a British ale yeast that contributes to the desired haze of the style. But after several test batches while pursuing our dream hazy recipe, we tried Kveik yeast. A recently available strain that Norwegian brewers have used for making farmhouse-style beers, it delivered the fruity finishing touch the beer needed.

Earthy hop flavor and just enough bitterness

The beer that put us on the map (with a World Beer Cup gold medal just months after we opened and a second gold ten years later), Amber is the epitome of malty beer balance. It features artful notes of toasted malt and nuttiness along with caramel sweetness, all perfectly balanced with a woodsy/earthy hoppiness and the light fruitiness of English ale yeast. A world-class classic beer of the finest order.

Another of our three debut beers in 2005, Amber’s origin story starts at The Brew Hut and co-founder Kevin DeLange’s homebrewer days and Beer Judge Certification Program  education. “I think ESB is one of the most balanced beer styles there is,” he says. “There’s malt through and through and just the right counter balance of hops.”

Dry Dock Brewing Company was the first brewery to open in Aurora, Colorado. A decade ago, owners Kevin DeLange and Michelle Reding expanded their homebrew shop, the Brew Hut, by adding a seven BBL brewhouse and tasting room in the back room. By word of mouth, the 900-square-foot brewery established itself early on as a community gathering place, and Aurora’s microbrewery.
